Melanie Vianes
- Director, Dining and Retail Services
As Director of Dining and Retail Services, Melanie Vianes brings more than 25 years of hospitality experience, including 20 years of leadership in university dining. Since joining the team in August 2026, she has been eager to support and collaborate with the campus and local communities. Melanie leads the university's dining and retail presence through a people-focused, experience-driven approach to operations and development. She oversees a team of more than 300 employees and, in partnership with numerous campus departments, is responsible for financial management, human resources, communications, procurement, information technology, culinary operations, and guest services.
Before joining the university, she served as General Manager of Sodexo Dining Services at Marquette University, advancing through seven progressively responsible roles. Her expertise include developing team members into leadership positions, creating signature programs, strengthening campus and community partnerships, and fostering engagement among students, employees, community members, faculty, and staff while remaining fiscally and operationally responsible.
At Sodexo, Melanie served as National Co-Chair of Programs for SoTogether, the company's gender-focused employee business resource group. She was also a Culture and Belonging Champion, developed mentorship programs, and led numerous innovation, safety, and service initiatives. Melanie's experience also includes Milwaukee's event industry. She served as Director of Programs on the local board of the National Association for Catering and Events and continues to have a passion for food, beverages, and community events.
A Milwaukee native and also an alumnus, Melanie earned a B.A. in Communication from the University of Wisconsin-Milwaukee. In 2025, the Wisconsin Restaurant Association recognized Melanie as one of its 25 Women to Watch in Hospitality, honoring her talent, leadership, and impact on the industry.
